“…the life of every creature is its blood.”
Leviticus 17 & 18.
I wonder why God is so adamant about us not eating blood? I would consider Acts 15:19-21 in wondering if this still applies at all.

”For the life of the flesh is in the blood, and I have given it to you upon the altar to make atonement for your souls; for it is the blood that makes atonement for the soul.’“
Leviticus 17:11 NKJV
A right thing, done in a right way is what God calls us to do. When it came to sacrifices, part of the right way was where the sacrifices were made and by whom they were made. Once God established a location, He desired for that location to be special and associated with His presence. And it is very significant that the life is in the blood, and that is why there is no forgiveness without the shedding of blood. Because if the wages of sin is death, then the compensation for it must be the giving of a life. The giving of a life for the sake of atonement is represented therefore by the shedding of blood. And therefore, blood was to be special for the Israelites and was not to be used for a common thing like eating it. And yes, all food laws were changed when Peter received the vision of the blanket in the book of Acts. So Jesus’ death, and atonement being established in His blood, changed what we are able to eat as well.
